Next Level Hipster Salad

Sometimes all you want out of life is a salad. Why not make it a totally rockin’ salad while you’re at it? This amazing charred parsnip and fresh greens salad is great for a weeknight indulgence… but also awesome at parties, or at a pot luck, or as a beautiful side dish at your family’s dinner table.

Parsnips are great for fibre, and also contain potassium, manganese, magnesium, phosphorous, zinc, and iron, in addition to an impressive range of vitamins, including vitamin B, vitamin C, vitamin E, and vitamin K. Paired with other great veggies here like cucumber (great source of vitamin K and molybdenum) and carrots (rich in antioxidants and vitamin A). Everything in this dish is good for you in some way. And the creamy, lush, caramelised way parsnips get when put through the oven treatment will just take it to 11. Sundried tomatoes and apples give the dish a final dash of summer. Want to impress your fellow hipster friends? Or convert some people into the next stage of the hipster horizon? Or get your kids to eat a salad that’s a little different, a little crunchy? This gorgeous salad is for you. Healthy and tasty. Who said we couldn’t have it all?
