Celery, Pear, and Blue Cheese Salad

Fans of blue cheese, check this out–it’s a more adult version of a celery salad, healthy and quick too. Wait a minute, I hear you say–a blue cheese salad? Healthy? Well, in moderation of course… and further, recently scientists have found that blue cheese (in particular, Roquefort) has certain anti-inflammatory properties (x). Cranberries are generally known to have a high nutrient and antioxidant content, famous for being a “superfood” (x). And walnuts have been said to be the healthiest nut, recommended by scientists to be part of everyone’s daily diet (x). With our powers combined–this makes for one seriously snazzy salad, great as a side dish or a quick weeknight meal. But don’t just take our word for it. Check it out!

Celery, Pear, and Blue Cheese Salad

Ingredients

  • x4 full celery stalks
  • x2 red cheeked pears
  • 4+ leaves of butterhead lettuce
  • Small slab of blue cheese (or a large slab. We won’t judge.)
  • 3 tbsp almonds
  • 2 tbsp vinegar
  • 2 tbsp honey

Instructions

  1. Separate leaves and chop celery stalks in half. Place in cold water for 15 minutes.
  2. Add almonds to a hot pan. Toast them up and set aside.
  3. To a bowl, add vinegar, honey, and a pinch of salt. Whisk it up!
  4. Chop celery into 1 cm slices. Don’t forget the leaves!
  5. Cut the cheeks off the pears and slice into 1/2 cm segments.
  6. Chop up the almonds.
  7. Combine all ingredients into a bowl with the dressing.
  8. Toss it well!
  9. Serve on butterhead lettuce cups.
  10. Crumb in some blue cheese. Finish with freshly cracked pepper.
