Next Level Hipster Salad
Sometimes all you want out of life is a salad. Why not make it a totally rockin’ salad while you’re at it? This amazing charred parsnip and fresh greens salad is great for a weeknight indulgence… but also awesome at parties, or at a pot luck, or as a beautiful side dish at your family’s dinner table.
Parsnips are great for fibre, and also contain potassium, manganese, magnesium, phosphorous, zinc, and iron, in addition to an impressive range of vitamins, including vitamin B, vitamin C, vitamin E, and vitamin K. Paired with other great veggies here like cucumber (great source of vitamin K and molybdenum) and carrots (rich in antioxidants and vitamin A). Everything in this dish is good for you in some way. And the creamy, lush, caramelised way parsnips get when put through the oven treatment will just take it to 11. Sundried tomatoes and apples give the dish a final dash of summer. Ingredients
- 2x parsnips
- 2x cucumbers
- 2x Carrots
- 100g Sundried Tomatoes
- 2x Green Apples
- Small bunch of parsley
- 100g Baby Spinach Leaves
- Extra Virgin Olive Oil
- Balsamic Vinegar
Instructions
- Preheat an oven to 200°C
- Peel and slice parsnip into sticks. Toss with olive oil, salt and pepper, and roast in the oven for 20min, turning once, or until lightly charred.
- In the meantime, use a vegetable peeler to get carrots and cucumbers into ribbons. Slice green apples into fine sticks. Wash parsley and spinach leaves.
- Toss everything together with olive oil and balsalmic vinegar to taste. Eat up!
