Fancy Schmancy (Actually Easy) Celery Salad

This radicchio, walnut, grape, and celery salad might look (and sound!) fancy, but it’s super easy to put together, and super tasty too. Want to impress family coming over, bring something interesting to a potluck, or whip up a quick and unusual side dish for dinner? This salad’s up for the challenge.

Other than the nutritional benefits of celery, which you can read all about here (x), this salad’s other ingredients are also highly rated for their healthy content. Radicchio, a key part of many Italian dishes, is a quick-growing leafy vegetable that is high in Vitamin C, and is also home to Vitamins B and K, as well as minerals like copper, iron, and zinc. Walnuts have high amounts of heart-healthy fats and omega-3 fatty acids. Grapes have been said to contain powerful anti-oxidants. So get cooking!

Ingredients

  • 300g of celery
  • 1 Radicchio leaves, torn coarsely
  • 100g of walnuts
  • 140g of seedless black grapes, halved
  • 3 Shallots, thinly sliced
  • 1 tbs of Dijon mustard
  • 3 tbs of aioli
  • 2 lemons, juice and zest
  • 2 tbs Vegetable oil

Instructions

  1. Heat oil in a frying pan. Add walnuts and cook on a low heat with shallots until golden.
  2. Once walnuts are cool, add to a salad bowl and toss with radicchio, celery, shallots and grapes.
  3. Mix up the aioli with mustard and lemon juice.
  4. Pour the dressing over the salad and toss.
  5. Serve up!
